Since he was a child, he used to cook with his grandmothers, from whom he learned how difficult and majestic it is to offer a well-made dish! At the age of 18, he started training in culinary techniques in Peru at the Gallia Institute, after which he had the opportunity to practice in Castilla la Mancha (Spain). It was in this very place that he began his culinary adventure of "leading a kitchen." For the chef, techniques and experiences are the seasoning of his daily passion. At 24, he started as a chef in a modern Peruvian kitchen in Madrid. Here, he discovered his passion for innovation, the desire to go beyond a simple typical dish and start creating dishes in his own way: in search of the flavor balance he learned when he was young but with a modern and fresh touch. Later, in France, he decided to elevate Peruvian cuisine to the top, to make everyone discover it through well-executed dishes. It is with the same passion that has driven him since his childhood that he brings his cuisine to the people, highlighting Peruvian gastronomy in all situations. This is how the annual Peruvian gastronomy and culture event in France, Mixtura France, was born. To better know about him before the conference:
